Three Delectable Vegan Recipes to Treat Yourself
Tarte au Soleil 🌞
Ingredients:
- 2 sheets of frozen vegan puff pastry
- 5 sundried tomatoes, diced
- 3 artichokes, roughly chopped (canned works!)
- 80g pizza sauce
- 100g Everything-but-the-Bagel Oat Creme Cheese by @compassion.creamery
- Handful of vegan cheese
- Handful of dill & parsley, roughly chopped
- Smoked paprika to top
Instructions:
- Gently peel off one sheet of frozen puff pastry and lay it on a baking sheet.
- Cut off 4 corners to form a rough circle.
- Spread pizza sauce and oat creme cheese on the pastry.
- Mix sundried tomatoes, artichokes, vegan cheese, dill, and parsley in a bowl, then scatter generously over the pastry.
- Cover with the second puff pastry sheet, also with corners cut off.
- Place a small circular container in the center, gently pressing down to form an indent.
- Use a knife to cut the pastry into 16 "rays," then twist each pair towards each other and pinch at the end to form a point.
- Bake at 175C for 30 minutes or until golden brown, flaky, and sprinkle with smoked paprika to finish.
Caramelised Onion Fig Balsamic Pastry 🧅
Ingredients:
- 1 sheet vegan puff pastry
- 1 white onion
- 3 Tbsp olive oil
- 3 Tbsp fig balsamic glaze
- 6 tsp Everything-but-the-Bagel Oat Creme Cheese by @compassion.creamery
- 6 tsp fermented beetroot
Instructions:
- Preheat oven to 205C.
- Chop onion into 6 circular slices lengthwise.
- On a lined baking sheet, drizzle olive oil and fig balsamic glaze in six pools.
- Place onion slices face down on top of the oil-balsamic mixture.
- Slice puff pastry into trapeziums and lay over onions, pressing gently. Brush with olive oil.
- Bake for 30 minutes or until puff pastry is golden and onions are caramelized.
- Spoon 1 tsp of Oat Creme Cheese on top of each onion.
- Garnish with fermented beetroot and serve.
Tim Tam Creme Delights 🍪🍫
Ingredients:
- 1 packet vegan cookies (Tim Tams)
- 80g Chocolate Oat Creme by Compassion Creamery
- 50g melted chocolate
- Figs and raspberries to garnish
Instructions:
- Blend Tim Tams to crumbs.
- Fold in Oat Creme until homogeneous.
- Dip and coat in melted chocolate.
- Serve garnished with fresh fruit.
